Limoncello and summer fruit

For anybody who has a bottle of Limoncello lying around...here is a refreshing easy summer dessert recipe.


Strawberries and blackberries with limoncello

a pint of strawberries*, washed and sliced
a pint of blackberries, washed
2 tablespooons of superfine sugar
50 ml Limoncello
mint or lavender to decorate

Combined above and let rest, allowing flavours to blend. Garnish with mint.

Serve on its own or with vanilla ice cream.

Notes

I have used strawberries from a land far, far away that are white at the center. Seasonal strawberries that are red throughout give a much better result. Having said that we still enjoyed the recipe and I cannot wait to try it in true summer. I would strongly suggest serving this recipe when the meal itself is heavy.
